The Atelier SUSHI Experience

Kyoto’s Original Sushi Workshop
Atelier SUSHI was founded by Kana Kotani to share the art of sushi-making and the richness of Japanese culture with visitors. Every detail has been carefully chosen to connect guests with Kyoto’s living traditions.

We use rice grown by Kana’s father in Shikoku, fish from Kimura Fishmongers, a family-run business in Nishiki Market for over 400 years, and handmade ceramics from nearby Toutensei Kawasaki Pottery — all local businesses.

Our small, dedicated team offers a cooking class experience beyond the usual tourist trail, letting guests immerse themselves in authentic Japanese culture, one sushi roll at a time.

MASTER DELICIOUS SUSHI

Join us as we guide you step-by-step through the art of sushi-making! Start by seasoning freshly cooked vinegared rice, then master the craft of rolling and shaping sushi using the freshest fish—carefully sliced and prepared in advance, sourced locally that morning.

 

You'll learn to make both Nigiri-sushi and Maki-sushi (rolled sushi), so you can recreate these delicious dishes at home and enjoy them with family and friends.

Each slice of fish has been expertly prepared in advance by skilled local fishmongers—masters of their craft—so it's ready for you to use when the workshop begins.
